Stick Em Up launched on August 5, 2019. In the days immediately following launch, the developer (Nicholas Rizzo) pushed four updates between August 6 and August 16, 2019 — mostly bug fixes, AI improvements, and small additions like body armor. The last of these updates (August 16, 2019) ended with "More Coming Soon!" suggesting intent to continue at the time, but no further updates were ever posted. There are no unreleased DLC entries on the store, no roadmap or announced future content, and no developer communications of any kind after August 16, 2019. Given that all post-launch activity was limited to a two-week stabilization window after launch, and no further development has been communicated in nearly seven years, the game is best understood as having shipped as a finished product with a brief post-launch patch period. No content beyond what shipped has been announced or indicated.

Stick Em Up features a unique combat system that allows players to adapt the game to their style of gunplay. Players can utilize different environments to take on tons of enemies, use hostages to pause fighting, and much more. The combat system also features an intense gore system, which while doesn't overpower the scene provides an entertaining experience through dismemberment and an exaggerated physics-based combat system.
